The state of Quintana Roo has launched a partnership with Airbnb to preserve and promote traditional Mexican cuisine throughout the region. The Quintana Roo Gastronomy Promotion Committee is implementing a certification program for local cooks to highlight the state’s culinary heritage and boost cultural tourism.
The initiative targets cooks from Cancun, Playa del Carmen, Tulum, Felipe Carrillo Puerto, and José María Morelos. Airbnb is providing financial support for the certification process, which will be conducted through the Conservatory of Mexican Gastronomic Culture (CCGM).
According to state officials, the program aims to strengthen the region’s culinary identity while creating economic opportunities for local communities. The certification process validates traditional cooking knowledge and opens doors for career advancement and tourism-related income.
Alignment with Sustainable Tourism
The partnership aligns with Quintana Roo’s Sustainable Tourism Master Plan 2030, which identifies gastronomy as a key sector for tourism diversification. A particular focus has been placed on including communities from the Caste War Route in the Maya Ka’an destination, helping local cooperatives improve their culinary offerings.
Bernardo Cueto, State Secretary of Tourism, emphasized that the accreditation of traditional cooks is essential for consolidating Quintana Roo’s culinary identity and creating development opportunities for local communities.
The program represents a strategic effort to preserve Mexico’s culinary traditions while using gastronomy as a driver for sustainable economic growth in a state where tourism represents 87 percent of the GDP.
